GHEE CAKE

This is a super soft, moist, aromatic and delicious loaf cake which is easy to prepare. It is a perfect tea cake.

Ingredients

1. Maida – 1 cup

2. Baking powder – 1 tsp

3. Salt – 2 pinch

4. Eggs – 2

5. Sugar – ½ cup

6. Vanilla essence – 1 tsp

7. Milk – ½ cup

8. Ghee – ½ cup (in solid form)

9. Lemon juice - 1 tsp


Preparation

1. Preheat oven to 160 degree Celsius for 10 minutes.

2. Grease the baking dish with ghee and line it with a butter paper.

3. Sift maida, baking powder and salt and keep aside.

4. Mix eggs and sugar in a bowl. Boil water in a pan and lower the flame. Keep the bowl with egg mixture on top of pan without touching water. Beat well on low speed continuously till sugar is almost melted and the mixture turns white and frothy.

5. Remove from fire and add vanilla essence and beat well on low speed till the sugar melts.

6. Add the maida mix and fold well.

7. In a pan mix milk and ghee and boil it. Remove from fire and add to maida mix and mix well.

8. Add lemon juice and mix well.

9. Transfer the mixture to the greased tray and smooth the top. Tap few times and bake for 30-35 minutes or till done.


Tips

1. Adjust sugar as per your preference.

2. Use best quality ghee for better taste.

3. Cardamom powder or pineapple essence or lemon rinds or any essence of your choice can be used in lieu of vanilla essence.

4. Slice the cake only after it cools.
