ERISSERI (MASHED VEGETABLES)

Erisseri is another traditional dish that is made for Onam sadya. It can be made with a single vegetable or combination of vegetables like pumpkin, yam, red cowpea, raw banana etc with coconut paste and seasoned with roasted coconut. This is served best with Kerala red par boiled rice.

Ingredients

1. Yam cubed – 2 cups

2. Pumpkin – 1 cup

3. Turmeric powder – 1 tsp

4. Chilli powder – 1 tsp

5. Pepper powder - 1 tsp

6. Coconut grated – 1 cup

7. Cumin seeds – 1 tsp

For Tempering

1. Oil – 2 Tbsp (Coconut oil preferred)

2. Cumin seeds – 1 tsp

3. Red chillies – 3-4

4. Shallots sliced – ½ cup

5. Curry leaves

6. Grated coconut – ½ cup

7. Chilli powder – 1 tsp

8. Turmeric powder – ½ tsp

9. Pepper powder – 1 tsp


Preparation

1. Cook the yam and pumpkin with turmeric powder, chilli powder and pepper on medium flame till it is cooked. Add salt and mash slightly.

2. Grind coconut with cumin seeds to a coarse paste and add to the mashed vegetable. Cook for 2 minutes on medium flame. Curry should be little loose. Remove from flame and keep aside.

3. Heat oil and lower the flame to minimum. Crackle cumin seeds and add red chillies. Saute and add sliced shallots, curry leaves. Saute for a minute and add grated coconut. Stir fry till golden brown on medium flame. Then add pepper powder, chilli powder and turmeric powder. Mix and add to the curry. Mix well. Adjust the seasoning.

4. Set aside for some time before serving.
