EGGLESS MAYONNAISE

A spoon of creamy mayonnaise is an essential fast food ingredient. It can be served as a dip or a spread or a salad dressing. It is an all purpose condiment. It got its name from French word ‘moyeu’ which means egg yolk. Eggless mayonnaise can be easily prepared at home.


Ingredients

1. Chilled full cream milk – ½ cup

2. Chilled olive oil or any unflavoured oil – 1 cup

3. Pepper – ½ tsp (optional)

4. Chilli flakes – 1tsp (optional)

5. Salt – ½ tsp

6. Sugar -2 tsp

7. Mustard powder – ½ tsp

8. Vinegar – 1 Tbsp

9. Lime juice – 1 Tbsp


Preparation

1. In a mixer add ½ cup milk, ½ cup oil, mustard powder, pepper powder, sugar and salt. Blend for 2 minutes. (Pulse and blend slowly). The mixture will be thick now.

2. Slowly add ¼ cup of oil and 1 Tbsp vinegar. Whip for 2 seconds.

3. Add the rest of the oil and 1 Tbsp of lime juice and whip for 2-3 seconds. Now the mixture will be very thick and creamy.

4. Transfer to air tight container and keep in fridge. Use within 2-3 days


Tips

1. It can be made with hand blender also. Oil should be added slowly in small quantities.

2. Honey can also be used in place of sugar.

3. To prepare chilli garlic mayonnaise add 2 Tbsp of chilli sauce, 2-3 cloves of garlic and ½ tsp of chilli flakes along with other ingredients.

4. To prepare mixed herb mayonnaise add 1 tsp of mixed herbs or Italian seasoning along with other ingredients.

5. Milk can be replaced with fresh cream, in which case add 1 cup of cream for ¼ cup of oil.

6. Chilled soya milk also can be used for a vegan version.

7. Only vinegar or lime juice can be used instead of combining both.

8. Sugar and pepper can be varied as per your preference.

9. Hung curd can also be used in lieu of milk.
