EGG-LESS MARBLE CAKE

Marble cake is the cake that has both vanilla and chocolate flavours. The two distinct colours are mixed to give a marble effect. This egg-less cake is soft, rich and moist. It is a perfect cake to accompany a cup of tea or coffee.




Ingredients

1. All purpose flour (maida) – 3 cups (420 gm)

2. Baking powder – 2 tsp

3. Baking soda – ½ tsp

4. Salt – ¼ tsp

5. Milk – 1½ cup (360 ml)

6. Apple cider or any vinegar –1½ Tbsp

7. Butter softened – ¾ cup (180 gm)

8. Sugar powder – 1½ cup (300 gm)

9. Vanilla essence – 2 tsp

10. Hot water – ¼ cup

11. Cocoa powder – ¼ cup (30 gm)

12. Instant coffee powder (optional) – 1 tsp



Preparation

1. Preheat oven to 180 degree F.

2. Grease the cake pan (I made in a loaf pan) and keep aside.

3. In a large bowl combine the flour, baking powder, baking soda and salt. Keep aside.

4. In another bowl combine milk and vinegar and keep aside for 5 minutes. The milk will curdle.

5. In another bowl beat butter and sugar until creamy. Add vanilla essence. Continue beating for 2 minutes to combine well. Reduce the speed of hand mixer to low and add half of the flour mix. Mix well.

6. Add milk mixture and continue beating for a minute.

7. Add the remaining flour and beat just until combined. Do not over mix the batter. The batter will be slightly thick.

8. In a bowl stir together hot water, cocoa powder and coffee powder if using until smooth.

9. Take 1/3rd of the batter in a bowl and fold the cocoa mix into it. Mix well and keep aside.

10. Pour a cup of vanilla batter at the bottom-centre of the pan.

11. Pour 1/3rd of the chocolate batter on top of vanilla batter in the pan. Do not mix them.

12. Repeat the layers with vanilla mix and cocoa mix alternatively. Allow it to spread on its own.

13. Bake it for 40-50 minutes or till done. Baking time may vary with oven.

14. Remove the cake from oven and cool it.


Tips

1. If a skewer comes out clean from the cake then it indicates that the cake is ready. In doing so do not keep the oven open for long.

2. All ingredients should be at room temperature.
