CREAMY PINK SAUCE PASTA

It is a unique creamy and tasty pasta which is a blend of red and white sauces. It is easy to make and has a tang from the tomato sauce and creaminess from the white sauce.


Ingredients

To cook the pasta

1.    Penne pasta – 200 gm

2.    Water – 4 cups

3.    Salt

4.    Olive oil – 1 Tbsp

For the white sauce

1.    Olive oil – 1 Tbsp

2.    Butter – 2 Tbsp

3.    Maida – 2 Tbsp

4.    Milk – 500 ml

5.    Salt

6.    Black pepper – ½ tsp

7.    Cheese slices – 2

For the red sauce

1.    Tomato – 3 big

2.    Olive oil – 2 Tbsp

3.    Butter – 2 Tbsp

4.    Chopped garlic – 2 Tbsp

5.    Mixed herbs – 1 tsp

6.    Chopped onion – 1 medium

7.    Diced capsicum – 1 medium

8.    Broccoli – 1 cup florets

9.    Chilli flakes – ½ tsp

10. Salt

11. Black pepper – ¼ tsp

12. Tomato ketchup  - 2 Tbsp


Preparation

Making Pasta

1.    Boil water in a pan with salt and oil. Add the pasta and cook for 8-10 minutes or till it is cooked.

2.    Remove from fire. Strain and keep aside.

Making white sauce

1.    Heat oil and butter in a pan. Add maida and sauté on low flame for 1 or 2 minutes. When it starts bubbling add cold milk stirring continuously.

2.    Cook till it is slightly thick. Add pepper and salt. Mix well.

3.    Add cheese slices and remove from fire. Mix well and keep aside.

Making red sauce

1.    Blanch the tomatoes in boiling water for 2 minutes and transfer to cold water. Remove the skin and coarsely puree it. Keep aside.

2.    Heat oil and butter. Add the chopped garlic and herbs. Sauté for a minute.

3.    Add chopped onions and sauté for 2-3 minutes till it is light brown.

4.    Add capsicum and broccoli. Sauté for 2-3 minutes.

5.    Add tomato puree, salt, chilli flakes, pepper powder and tomato ketchup.

6.    Cook covered on low flame for 2-3 minutes.

7.    Remove from flame and add the white sauce. Mix well.

8.    Add the cooked pasta and cook covered on low flame for 2 minutes.

9.    Remove from flame and garnish with dried herbs and serve hot with garlic bread.


Tips

1.    For non veg version: Mix fried chicken pieces (marinated in ginger garlic, chilli flakes, pepper, mixed herbs and salt).

2.    Adjust the seasoning according to your taste.

3.    Oil can be used in place of butter.

4.    Almond milk can also be used in place of normal milk.
