Fruit custard is a great summer treat and a popular dessert in many households. In this recipe I am adding few ingredients which makes it creamier and flavourful. It is a healthy, easy and delicious desert made with milk and seasonal fruits which makes it a favourite among all age groups.
Ingredients
1. Milk – 3 cups
2. Sugar – 5 Tbsp
3. Custard powder – 4 Tbsp
4. Fresh cream – 3-4 Tbsp
5. Butter – 1 Tbsp
6. Vanilla essence – 1 tsp (or any flavour)
7. Chopped fruits (apple, grapes, mango, pomegranate, banana etc)
8. Chopped dry fruits (pista, badam, cashew nuts) for garnishing
9. Orange crush or pineapple crush or cranberry crush for garnishing
Preparation
1. Mix custard powder with ¼ cup lukewarm milk, without any lumps. Keep aside.
2. Refrigerate the chopped fruits.
3. Heat milk on medium flame and add sugar. Mix well.
4. Add the custard powder mix slowly, little by little, stirring continuously. Reduce the flame to low. Let it boil, stirring well. Boil for 2 minutes. Remove from flame.
5. Stir for another 5 minutes, adding the butter and cream. Mix well.
6. Add the vanilla essence. Mix well and transfer to a serving bowl. Cover the bowl tightly. Let it cool and refrigerate until chilled.
7. Once the custard is chilled mix the chilled fruits. (Keep some fruits for garnishing).
8. Garnish with chopped dry fruits, chilled fresh fruits, fresh cream and any of the fruit crush. Serve after some time.
Tips
1. Avoid using citrus fruits and melons for the custard.
2. Garnishing can be done with honey or caramel also.
3. For chocolate custard add chopped chocolate to the hot custard.
4. Any flavour can be added (cardamom powder, saffron etc) to the custard as per your choice instead of essence.
5. Sugar can be replaced with honey, but add the honey only before serving.
6. Fruit custard can be served along with ice cream also.
7. The chopped fruits may be transferred into a bowl with sugar syrup before refrigerating so as to retain its colour.
