Crispy boneless chicken in a thick creamy and delicious mushroom sauce. This is a quick and easy to prepare chicken recipe which can be served with a side of potatoes or pasta or noodles or rice.
Ingredients
For marination
Boneless chicken pieces – 250 gm
Rosemary – ½ tsp
Thyme – ½ tsp
Lime juice – 1 tsp
Pepper – ½ tsp
Garlic paste – ½ tsp
Olive oil – 1 tsp
Salt
For Mushroom sauce
Butter or olive oil – 1 Tbsp
Minced garlic – 1 tsp
Chopped onion – 1 medium size
Sliced mushroom – 2 cups
Mustard sauce – 1 Tbsp
Milk – ½ cup
Cream – ½ cup
Cream cheese – 2 Tbsp
Rosemary – ½ tsp
Thyme – ½ tsp
Parsley – 1 tsp
Preparation
In a bowl mix the chicken with rest of the ingredients for marination and keep aside for 30 minutes.
Heat a pan. Add one Tbsp olive oil and hallow fry the marinated chicken for 4-5 minutes and remove from fire and keep aside.
In the same pan heat butter or olive oil on medium flame and add garlic and sauté for few seconds.
Add chopped onions. Sauté till it becomes soft.
Increase the flame and add sliced mushrooms. Sauté till water evaporates and mushrooms are cooked.
Reduce the flame. Add mustard sauce and mix well.
Mix the cream and milk together and add to the pan. Add salt and mix well.
Cook for 2 minutes. Add grated cheese, rosemary, thyme and parsley. Stir well.
Cook for a minute and add the fried chicken. Simmer for 2-3 minutes on low flame and remove from fire.
Sprinkle some grated cheese and parsley and serve hot.
Tips
Parmesan cheese can be used in place of cream cheese.
