CREAMY CHICKEN ENCHILADAS

This is a delicious Mexican meal which is made with tortillas, shredded chicken, cheese and a delicious white creamy sauce.


Ingredients

1. Cooked and shredded chicken – 2 cups

2. Tortillas – 10

3. Shredded mozzarella cheese – 2 cups

4. Butter – 3 Tbsp

5. Maida – 3 Tbsp

6. Chicken stock – 500 ml

7. Cream cheese – 200 gm

8. Salt and pepper - to taste

9. Coriander leaves – 2 Tbsp

10. Green chilli cut into medium pieces – 2-3

11. Tomato paste – 2 Tbsp

For Spice Mix

1. Paprika – 2 tsp

2. Onion powder – 1 tsp

3. Cumin powder – ½ tsp

4. Oregano – ½ tsp

5. Garlic powder – ½ tsp


Preparation

1. Melt butter in a pan. Reduce to low flame. Mix maida. Stir fry for a minute.

2. Add spice mix and tomato paste and mix well.

3. Add chicken stock. Mix well until smooth. Add cream cheese and green chillies. Mix well and remove from heat before it starts boiling. Keep the sauce aside.

4. In a bowl add shredded chicken, 1 cup of shredded cheese, salt, pepper and chopped coriander leaves and mix well. Keep aside.

5. Place the chicken mixture into each of the tortillas and roll them and place them in a greased baking dish.

6. Pour the prepared sauce over it covering well all the rolls.

7. Top it with remaining shredded cheese and bake at 180 degrees for 20-25 minutes. Sprinkle dry basil leaves on top and serve hot.


Tips

1. Normal chappathi/rotis can also be used in lieu of tortillas.
