COCONUT TOFFEE (COCONUT ICE)

This is a no bake no cook recipe which is easy and fast to prepare. These sweet little treats are a delight on any Christmas platter.


Ingredients

1. Condensed milk – 1 can (400 gm)

2. Desiccated coconut – 350 gm

3. Sugar powder or icing sugar – 180 gm

4. Vanilla extract – 1tsp

5. Salt – a pinch


Preparation

1. Line a square cake pan with butter paper or parchment paper and keep aside.

2. In a bowl add condensed milk, icing sugar, vanilla extract and salt. Mix well.

3. Add desiccated coconut and mix until it blends well and absorb the condensed milk and sugar.

4. Divide the mixture into two equal portions. Add few drops of food colour of your choice to each portion. (Option - one portion may not be added with food colour to retain the original colour.)

5. In the prepared pan spread one portion of the mix and flatten it. Then top it with the other portion and flatten it to get a smooth top surface.

6. Cover the pan and refrigerate for one hour.

7. Cut into squares or any shape of your choice and store in air tight container.


Tips

1. Consume within a week or store in freezer.

2. Cardamom powder can be used in place of vanilla extract.

3. Roasted and chopped nuts can be added for a crunchy taste.
