CINNAMON ROLLS (EGGLESS)

Cinnamon rolls are sweet rolls, believed to have originated in Sweden. These are made with simple homemade dough with minimum ingredients and practically fool proof. They are light, delicious and fluffy. Make your festive season special with these rolls. It can be served as a snack, or a dessert or a breakfast dish.


Ingredients

For the dough

1. Warm milk – 2 cups (500ml)

2. Sugar – ½ cup (100 gm)

3. Melted butter – 8 Tbsp

4. Dry yeast – 2 tsp

5. Maida – 5 cups

6. Baking powder – 1 tsp

7. Salt – 1 tsp (not required if using salted butter)

For the filling

1. Brown sugar – ½ cup

2. Soft butter – ¾ cup (10 Tbsp)

3. Cinnamon powder – 2 Tbsp

For frosting (optional)

1. Soft cream cheese – 100 gm

2. Butter melted – 2 Tbsp

3. Vanilla extract – 1 tsp

4. Sugar powder – 100 gm (1 cup)


Preparation

1. Combine the warm milk with sugar and melted butter. Mix well. Add yeast. Stir well and keep aside for 10-15 minutes until frothy.

2. Add 4 cups of flour to the milk mix and stir well to combine. It will be a sticky dough. Cover the dough with a plastic wrap or a wet cloth. Keep aside for 1 hour or until it double up in size.

3. Mix ¾ cup of left over maida with baking powder and add to the above fermented dough, adding little by little, to a smooth dough which does not stick to your hands.

4. For the filling - Mix powdered brown sugar, butter and cinnamon powder to a paste and keep aside

5. Divide the dough into 2 parts. On a lightly floured surface roll each of them into a rectangle shape of 1 cm thickness.

6. Spread half of the filling over each of the dough evenly and roll out the dough into a tight cylinder (like a jelly roll) and cut into even size pieces (about 8 cm thick). Place in a greased baking pan or dish and cover with wet cloth. Let it rest for 30 minutes to expand again. Brush melted butter or cream on top.

7. Preheat oven to 180 degrees celcius and bake for 20-25 minutes or until golden.

8. Cool and store in air tight containers.

9. For the frosting – Mix together cream cheese, melted butter, milk and vanilla extract until smooth. Mix in the sugar powder, little by little, until it is runny. Drizzle it over the cooled rolls.


Tips

1. You can also add chocolate sauce or caramel on top of rolls instead of cream cheese frosting.

2. Adjust the sugar in the filling as per your preference.

3. Sprinkle a mixture of cinnamon powder and sugar powder on the rolls for a simple version of the rolls.

4. The rolls are best served warm.

5. Finely chopped raisins can also be added to the filling.
