This is a soft, airy and moist chocolate sponge cake which is easy to make. It is a delicious recipe with deep cocoa flavour and chocolatey. This sponge cake is great to use as a base for desserts like chocolate rum balls, black forest etc.
Ingredients
1. Maida (all-purpose flour) – 1 cup
2. Cocoa powder – ¼ cup
3. Cornflour – 4 Tbsp
4. Milk powder – 1 Tbsp
5. Baking powder –1 tsp
6. Baking soda – ¼ tsp
7. Eggs – 4
8. Salt
9. Sugar – ¾ cup
10. Vanilla essence – 1 tsp
11. Milk – ¼ cup
12. Oil – ¼ cup
13. Coffee powder – 1 Tbsp
14. Hot water – 3 Tbsp
Preparation
1. Mix coffee powder with hot water and keep aside.
2. Sieve together maida, cocoa powder, milk powder, corn flour, baking powder, baking soda and salt and keep aside.
3. Break the eggs into a large mixing bowl and beat till frothy and foam up.
4. Add sugar and beat again for 3-4 minutes till volume double up.
5. Add vanilla essence and keep beating and pour oil in a slow stream. Beat until combined.
6. Add milk and coffee mix and beat well. (Do not over beat).
7. Add maida mix little by little and mix gently till combined well.
8. Transfer to greased pan and tap the pan to the counter to let out the locked in air.
9. Bake in a pre-heated oven at 160 degree for 25-30 minutes or until done. (When the cake is done the tester inserted inside the cake comes out clean).
10. Cool the cake before cutting.
Tips
1. Ensure all ingredients are at room temperature.
