A soft, fluffy ,perfect and rich in flavour cake loaded with chocolate chips.
Ingredients
1. Butter – 100 gm
2. Sugar -1 cup
3. Eggs – 2
4. Baking powder – ½ tsp
5. Salt – a pinch
6. Vanilla essence – 1 tsp
7. Flour – 2 cups
8. Milk – ½ cup
9. Chocolate chips – ½ to 1 cup
Preparation
1. Grease and line a baking tray with butter paper.
2. Beat butter and sugar well. Add eggs one by one and beat to mix. Add baking powder, salt, essence and mix well.
3. Add one cup flour and mix until just combined. Mix in the milk well. Add rest of the flour (one cup) and mix well. Add the chocolate chips to the batter and mix gently with a spatula to fold them. Pour into the baking tray or muffins moulds.
4. Preheat oven to 170 degrees Celsius. Bake for 20-30 minutes until a toothpick inserted comes out clean. Muffins take lesser time. 15-20 minutes.
Tips
1. Mix the wet ingredients with the dry until just combined. Over-mixing is not good.
2. You can use essence of your choice like orange, pineapple etc
