CHICKEN PIE

Chicken pie is a comfort food for a meal. It is crumbly pastry filled with tender chicken and vegetables. This delicious and tasty dish is easy and simple to prepare at home.

Ingredients

For the pie crust

1. Maida –2 ½ cups

2. Cold butter cubed – ¾ cup (170 gm)

3. Salt – ½ tsp

4. Sugar – 1 Tbsp

5. Ice cold water – 6-7 Tbsp

For the filling

1. Chicken cooked (with salt and pepper) and shredded – 4 cup

2. Chopped onion – 2 cup

3. Chopped carrot – 1 cup

4. Garlic crushed – 1 Tbsp

5. Maida – 4 Tbsp

6. Butter – 4 Tbsp

7. Cream – ½ cup

8. Boiled peas – 1 cup

9. Pepper powder – 1 tsp

10. Salt

11. Parsley and chilli flakes – to taste

12. Chicken stock or water – 1 cup


Preparation

1. Combine maida, sugar and salt in a food processor or a mixie jar and pulse a few times to combine well. (It can be done with hand also)

2. Add cubed butter and pulse the mixer until it becomes like crumbs.

3. Add the ice water and pulse the mixer just to combine.

4. Press a piece of the dough between your finger tips and if the dough sticks together then the mixing is correct. Otherwise add little more water and pulse the mixer till dough is correct. (Do not add excess water.)

5. Transfer the dough to a work surface or a large bowl and make it into a ball shape. (Do not knead the dough).

6. Divide the dough into half and make it into two flat disc and cover with plastic wrap and refrigerate at least for one hour.

Preparation of filling

1. Heat butter in a pan. Stir fry garlic. Add onion and carrot and sauté on medium heat until soft.

2. Add maida and stir continuously for 2 minutes.

3. Add 1 cup of water or chicken stock, little by little, and mix well.

4. Add cream. Cook on low flame for a minute or until the gravy is thick.

5. Add salt and pepper powder, shredded chicken, cooked peas and mix well.

6. Add parsley and chilli flakes. Mix and remove from fire.

Preparation of pie

1. Roll one of the pie crust disc and transfer to a pie dish.

2. Spread the filling over it.

3. Roll the second pie crust disc and cut it into strips of even thickness and arrange strips on top of the dish. Seal the sides and brush beaten egg.

4. Bake on a preheated oven at 200 degrees celcius for 25-30 minutes or until golden.

5. Remove from oven and let it rest for 15 minutes before slicing.


Tips

1. The dough is enough for one big crust or two small crusts.

2. Kebabs, salami, sausage etc can be used in place of shredded chicken.

3. Soya chunks or any other suitable vegetables can be used as filling for vegetarians.
