This homemade luncheon meat is juicy and chewy and easy to prepare with natural ingredients. It is ready to eat and also can be fried and tossed as chunks or bits or strips into any dish. It can be used like salami or sausages.
Ingredients
1. Boneless chicken – ½ kg
2. Green chillies – 3-4
3. Red chiili peppers – 2
4. Ginger – 1 inch piece
5. Garlic – 10-12 cloves
6. Black pepper corns – 1 Tbsp
7. Salt
8. Olive oil (or any oil) – 1 Tbsp
9. Oregano – 1 tsp
10. Basil – ½ tsp
11. Soya sauce – 1 Tbsp (optional)
12. Oyster sauce – 1 Tbsp (optional)
13. Spring onion stalks chopped – 2 Tbsp (optional)
Preparation
1. Grind ginger garlic, pepper corns, green and red chillies into a coarse paste.
2. Add cubed chicken pieces and grind to a paste. Transfer to a bowl.
3. Add the rest of the ingredients and mix well.
4. Transfer to a greased rectangular tray and press well. Apply little oil on a spatula and press hard on the loaf to release any air bubbles. And tap well at the end.
5. Boil water in a steamer and steam cook the meat loaf on medium heat for 30 minutes or until done.
6. Cool it and slice the meat loaf and is ready to serve.
Tips
1. Chiili flakes can be used in lieu of red chilli pepper.
2. This can be used in pastas, sandwiches or as a side dish.
3. Adjust the seasonings according to your taste.
