CHICKEN FRIED RICE

This Chinese fried rice, restaurant style, recipe is quick and easy to make. It is an aromatic, flavourful and delicious dish. This street food is preferred by most students and a favourite with elders too. No Chinese meal is complete without fried rice.



Ingredients

1. Basmati rice – 2 cups

2. Onion finely chopped – 1

3. Garlic chopped – 2 Tbsp

4. Carrot chopped – 1

5. Capsicum chopped – 1

6. Spring onion greens chopped – ½ cup

7. Eggs – 2

8. Chicken boneless small cubes – 1 cup

9. Oil – 2 Tbsp

10. Pepper powder – 1tsp

11. Salt

12. Soya sauce – 2 Tbsp

13. Chilli sauce – 1 Tbsp

14. Sugar – 1 tsp

For marinating chicken

1. Soya sauce – 1 tsp

2. Pepper powder – 1 tsp

3. Salt – ½ tsp


Preparation

1. Wash and soak rice for 30 minutes.

2. Marinate chicken with soya sauce. Pepper powder and salt.

3. Boil water with salt and cook the rice till almost done and strain. Keep aside to cool.

4. Heat one Tbsp oil in a pan and saute the marinated chicken on medium flame till done. Remove the chicken and keep aside.

5. Beat the eggs with salt and pour into the same pan and scramble with a spatula and remove from the pan.

6. Add one Tbsp of oil to the same pan and add garlic chopped. Saute for a minute on high flame. Add onion, carrot and capsicum. Stir well until it is tender.

7. Add the cooked chicken and scrambled eggs. Stir well. Reduce the flame to medium. Add soya sauce and chilli sauce. Mix well.

8. Add rice and mix gently on high flame. Add spring onion greens, pepper powder and sugar and stir until it is heated throughout.

9. Remove from the flame and garnish with spring onion greens.


Tips

1. A day old or cold rice help to prevent the rice from sticking together and getting mushy.

2. Use long grained rice preferably.

3. For an authentic flavour use sesame oil.

4. Vary quantity of soya sauce as per your taste.

5. For vegetarians skip chicken and eggs.
