CHICKEN CUTLETS

Chicken cutlets are all time favourites of all non vegetarians. It is a great starter or a snack for any time. They are deliciously deep fried patties of spicy chicken mixed with vegetables.


Ingredients

1. Chicken – 250 gm

2. Pepper -2 tsp

3. Salt

4. Potatoes – 2-3 boiled

5. Onion chopped – 2

6. Ginger – 1 inch piece Garlic – 12 cloves

7. Green chillies – 2-3

8. Curry leaves

9. Garam masala – 1 tsp

10. Coriander leaves – ¼ cup

11. Oil – 2 Tbsp

12. Bread crumbs – 4-5 slices

13. Egg – 1



Preparation

1. Wash and clean the chicken pieces and cook with salt and 1 tsp pepper powder. Cool and shred the chicken pieces and then mince the meat. Keep aside.

2. Crush garlic, ginger and green chillies together and keep aside.

3. Heat 2 Tbsp oil and add the crushed garlic, ginger and green chilies. Sauté for a minute and add the chopped onions. Sauté till light brown. Add the chopped curry leaves and coriander leaves.

4. Add the minced meat and mix well. Add salt, 1 tsp pepper powder and mix well. Keep aside to cool.

5. Mash the potatoes and mix with the chicken mixture. Add ½ cup of bread crumbs and knead well.

6. Shape the mixture into small patties/cutlets and keep aside.

7. Beat the egg well and keep aside.

8. Heat oil for frying and reduce flame to medium. Dip the cutlets in the beaten eggs and roll on bread crumbs and gently press down including on the sides so that the bread crumbs stick well on the cutlets.

9. Deep fry the cutlets in hot oil till both sides are golden.

10. Remove cutlets from oil on to a kitchen towel.


Tips

1. It can be shallow fried also instead of deep frying.

2. Cutlets can be prepared in the same way with any minced meat.

3. For vegetarians the cutlets can be prepared with minced soya chunks.
