CHICKEN CURRY (DHABA STYLE)

Every place has their own style of dhabas and other street food joints. My first visit to a dhaba was to Deluxe Dhaba at Ambala Cantt, way back in 1993. They used to serve hot tandoori rotis and phulkas with chicken curry. This simple and delicious dhaba style chicken curry is cooked with spices to get the maximum flavour. An amazing recipe from North Indian dhabas that is enjoyed by travelers and truck drivers. Enjoy this spicy and delicious curry with hot rotis, naan, jeera rice, etc.


Ingredients

1. Onions chopped – 3 medium

2. Ginger garlic paste – 2 tsp

3. Tomato puree – 1 cup (2 tomatoes)

4. Green chillies chopped – 2

5. Red chilli powder – 1 tsp

6. Coriander powder – 2 tsp

7. Cumin powder – 1 tsp

8. Garam masala – 1 tsp

9. Coriander leaves chopped – ½ cup

10. Oil – 5-6 Tbsp

11. Salt

For marination

1. Chicken pieces – 750 gm

2. Ginger garlic paste – 2 tsp

3. Turmeric powder – ½ tsp

4. Red chilli powder – 1 tsp

5. Salt


Preparation

1. Marinate the chicken pieces with ginger garlic paste, turmeric powder, red chilli powder and salt. Keep aside for 30 minutes.

2. In a pan heat 3 Tbsp oil. Add marinated chicken pieces and sauté on medium heat for 5 minutes. Lower the heat and continue frying for another 10 minutes till chicken is half cooked. And keep aside.

3. In a kadai heat 3 Tbsp of oil and add chopped onions. Saute till light brown, and then add ginger garlic paste. Cook for 2 minutes on low heat till the raw smell goes. Then add turmeric powder, chilli powder, coriander powder and cumin powder. Mix well and fry for 2-3 minutes on low heat adding little water.

4. Add the puree and salt. Mix well. Add green chillies and cook for 3-4 minutes.

5. Add chicken pieces along with its juices. Mix well and sauté on medium heat for about 5 minutes till the chicken is coated well with masala and oil separates.

6. Add a cup of water and mix well. Cook covered till chicken is soft.

7. Add garam masala and chopped coriander leaves. Mix and simmer till done.

8. Serve hot.


Tips

1. Adjust the chilli powder as per your preference.
