CHICKEN CAFREAL

Chicken cafreal is a Portuguese influenced dish popular in Goan cuisine. No festive feast is complete without chicken cafreal. In this dish chicken is marinated with a flavourful green spice paste known as cafreal masala. This dish is a bit tangy, spicy, aromatic and delicious.


Ingredients

1. Chicken – 1 kg

2. Salt

3. Oil – 1 Tbsp

4. Butter – 2 Tbsp

5. Sliced potatoes – 2 large


For marination

1. Coriander leaves with stalks chopped – 2 cup

2. Green chillies – 7-8

3. Peppercorns – 1 Tbsp

4. Bay leaf – 1

5. Cumin seeds – 1 tsp

6. Lemon juice – 2 tsp

7. Ginger – 2 inch piece

8. Garlic – 10-12 cloves

9. Turmeric powder – 1 Tbsp

10. Cinnamon – 1 inch piece

11. Cloves – ½ tsp

12. Salt


Preparation

1. Clean and cut the chicken into big pieces and give slits on the flesh.

2. Grind the ingredients for marination to a fine paste.

3. Mix the paste with cleaned chicken pieces and keep aside for at least 30 minutes.

4. Heat oil in a pan and cook the sliced potatoes with salt on low flame till golden colour. Remove and keep aside.

5. Add butter to the same pan and shallow fry the chicken pieces. Add the left over marination to the chicken and ½ cup water. Cook covered on medium flame for 10 minutes or till done. The gravy should be thick enough to coat the chicken pieces. Serve hot with the cooked potatoes.


Tips

1. The more you marinate (over night), better is the flavour of the dish.

2. A splash of rum can be added when the chicken is almost done.

3. Potatoes can be cut in any shape.
