CHICKEN AND CORN BAKED

This is a simple, fast and delicious continental dish which features chicken and corn in white sauce with a topping of cheese, herbs and bread crumbs. It has a juicy texture and mildly sweet flavour of corn. You can relish with toasted breads.



Ingredients

1. Butter – 1 Tbsp

2. Onion chopped – 1 medium

3. Garlic crushed – 1 tsp

4. Red chilli flakes – 1 tsp

5. Chicken boneless (small cubes) – 2 cups

6. Tomato chopped – 1 cup

7. Sweet corn – 2 cup

8. Salt and pepper to taste.


For White sauce

1. Butter – 2 Tbsp

2. All purpose flour (Maida) – 2 Tbsp

3. Milk – 2 cups (400 ml)

4. Pepper powder, salt

5. Nutmeg powder – ¼ tsp


For Topping

1. Grated mozzarella cheese – 1 cup

2. Oregano – 1 tsp

3. Red chilli flakes (optional)

4. Basil (optional)

5. Bread crumbs – 1 cup


Preparation

1. Melt one Tbsp butter in a pan and add chopped onions and garlic. Stir till onions are soft. Add red chilli flakes.

2. Add cubed chicken pieces and tomato. Sprinkle salt and pepper. Mix well and add sweet corn. Cook on medium flame until done and transfer to a baking dish. And keep aside.

3. In another pan melt two table spoon of butter and add maida stirring on low heat. Add milk little by little stirring well. Keep stirring the sauce until smooth and thick.

4. Add nutmeg powder, pepper and salt.

5. Spread the sauce over the chicken and corn mixture.

6. Sprinkle shredded cheese, bread crumbs and oregano.

7. Bake at 220 degree Celsius for 15-20 minutes or until cheese changes colour.

8. Serve warm.


Tips

1. Vegetables like carrots, broccoli or cauliflower can be added.

2. Oil, preferably olive oil, can be used as substitute for butter.

3. Excessive baking may harden the cheese layer topping.
