CHEESE MUFFINS

Cheese muffins with its unique taste are the favourites for children and adults alike. It is moist, cheesy, light, fluffy and easy to make muffins which are perfect for serving hot with soups or stews. It can also be served as snacks with a hot cup of tea or coffee.


Ingredients

1. Maida – 2 cups

2. Sugar powder - ¼ cup

3. Salt – 1tsp

4. Baking powder – 1 Tbsp

5. Baking soda – ½ tsp

6. Cheddar cheese grated – 1½ cup

7. Eggs – 2 large

8. Butter melted – ¼ cup

9. Curd – 1 cup

10. Seasoning (Italian or Oregano) – 1 Tbsp

11. Chilli flakes – 1 Tbsp


Preparation

1. Preheat the oven to 180 degrees celcius.

2. Mix together maida, sugar powder, baking powder, baking soda, and salt and grated cheddar cheese in a bowl. Add chilli flakes and seasoning and mix gently. Keep aside.

3. Stir together eggs, curd and melted butter in another bowl. Pour the egg mixture into the maida mixture and stir until combined well.

4. Spoon the mixture into the prepared muffin pan and sprinkle some chilli flakes and seasoning. Bake for 20-25 minutes until the top part is brown and remove from the oven.


Tips

1. Very finely chopped capsicums, garlic or spring onions can be added to the cake batter.
