Thoran is a tasty side dish prepared with vegetables and coconut. Cheera Thoran is prepared from red or green spinach leaves (Amaranthus). It is a favourite accompaniment with hot rice. Red spinach is highly nutritious and iron rich vegetable.
Ingredients
1. Red spinach (Laal saag) – 250 gm
2. Shallots – 4-5
3. Curry leaves
4. Green chillies – 2
5. Grated coconut – ½ cup
6. Garlic -2
7. Turmeric powder – ¼ tsp
8. Mustard seeds – ½ tsp
9. Dry red chilli - 2
10. Oil – 1 Tbsp
11. Salt
Preparation
1. Clean and wash the spinach. Drain water completely and chop finely. Keep aside.
2. Coarsely grind the coconut with green chillies, garlic, 2 shallots and curry leaves.
3. Heat oil. Crackle the mustard seeds. Lower the flame and add the red chillies, curry leaves and 2 sliced shallots. Saute till onions are brown and add chopped leaves with the ground mixture.
4. Cover and cook with salt and turmeric powder for 4-5 minutes on medium flame without water. Remove the cover and stir fry till it is dry and remove from fire.
