CAULIFLOWER WITH POTATO (ALOO GOBI)

Dhabha style Aloo Gobi is a dry stir fried spicy preparation of cauliflower and potato. This is a very common recipe in Northern part of India. This is a soul satisfying and comfort food of all ages.


Ingredients

1. Oil – 3 Tbsp

2. Potatoes – 2

3. Cauliflower – 1 medium size

4. Cumin seed (jeera) – 1 tsp

5. Ginger – 1 inch piece

6. Green chilli – 2

7. Tomato – 2 medium

8. Kashmiri chilli powder – 2 tsp

9. Coriander powder – 1 tsp

10. Turmeric powder – ½ tsp

11. Curd – 1 cup

12. Coriander leaves – 2 Tbsp

13. Garam masala powder – ½ tsp


Preparation

1. Heat oil in a pan and add the cubed potatoes. Saute for 5 minutes on low flame and add salt, cauliflower and saute on high flame till the colour turns to golden. Remove from pan and keep aside.

2. Add jeera, ginger crushed and chopped green chilli to the same oil in the pan and saute.

3. Add tomatoes chopped and mix on high flame and reduce the flame and sauté till tomatoes are soft.

4. Add chilli powder, coriander powder and turmeric powder. Mix well and stir for 2-3 minutes. Add beaten curd stirring continuously till it boils.

5. Add the fried potatoes and cauliflower. Mix well. Stir continuously adding little water. Mix and cook covered for 2-3 minutes.

6. Add coriander leaves and garam masala. Mix well and remove from flame.

7. Garnish with coriander leaves.


Tips

1. Soak the cauliflower florets in hot water with little salt and turmeric powder fro few minutes to remove worms and bugs , if any.
