This is a dry vegetable dish made in Kerala cuisine with finely chopped cabbage, cooked with shallots, green chillies and fresh coconut. Varieties of Thoran can also be prepared with vegetables like beans, beetroot, cow peas etc.
Ingredients
1. Cabbage finely chopped/ grated – 250 gm
2. Coconut grated – 1 cup
3. Green chillies chopped – 2-3
4. Ginger grated – 1 tsp
5. Shallots / onions sliced – ½ cup
6. Curry leaves
7. Salt
8. Turmeric powder – a pinch
9. Oil – 1 Tbsp
10. Mustard seeds – ½ tsp
Preparation
1. Mix all the ingredients except oil and mustard seeds and keep aside for 10-15 minutes.
2. Heat oil in a pan. Crackle mustard seeds and add the cabbage mix. Mix well and cook covered on low flame for 5-6 minutes. Remove the lid and stir fry for 2 minutes. No need to add water.
3. Remove from heat.
