BUTTER SCOTCH PUDDING

No meal is complete without a mouth watering dessert. What is better to have than a pudding! This is a wonderful pudding with a silky smooth, rich and creamy texture. It is easy to make and tastes delicious.

Ingredients

1. Butter – 3 Tbsp

2. Sugar – 1 cup

3. Whole cream milk – 3 cup

4. Eggs – 3

5. Gelatin – 3 Tbsp

6. Condensed milk – ¼ tin

7. Fresh cream – ½ cup

8. Butter scotch or Vanilla essence – ½ tsp

9. Biscuit crumbs – ½ cup


Preparation

1. Soak the gelatin in a mix of 3 Tbsp milk and 1 Tbsp water for at least 30 minutes. Double boil and keep it warm. Keep aside.

2. Mix 1 Tbsp of butter and ½ cup biscuit crumbs and roast on low flame in a pan till it is crisp. Remove from flame and transfer to a bowl and keep aside.

3. Heat butter and sugar in a thick bottom pan till it changes colour to golden. Reduce flame and add milk. Keep stirring till the caramel melts. Remove from flame and let it cool.

4. Beat eggs with 1 Tbsp sugar to a creamy consistency and add to the above milk mixture. Mix well and cook on double boiler till it is thick.

5. Let it cool slightly and mix in the melted gelatin, condensed milk, cream and essence. Keep it covered in the fridge till it sets (about 5-6 hours).

6. Sprinkle caramel syrup, biscuit crumbs and fresh cream on top of pudding.


Tips

1. Brown sugar can also be used which gives a darker colour.

2. For garnishing you can also use cut fruits, toffee bits, caramel crystals, dry fruits.

3. Gelatin can be substituted with 1 Tbsp of corn starch or 10 gm of china grass.
