BREAD SANDWICH PAKODA

Bread pakora, a delicious and popular street food from the North Indian cuisine is a tea time snack and a wonderful breakfast treat. These deep fried snacks are stuffed with spiced potatoes or paneer and served with green chutney or tomato sauce.


Ingredients

1. Bread slices – 10

2. Thick green chutney – ½ cup (optional)

3. Sweet and sour chutney (tamarind)– ¼ cup (optional)

4. Oil to fry

For filling

1. Potatoes – 4 ,boiled and mashed

2. Green chilli chopped – 1

3. Ginger chopped -1”piece

4. Fennel seeds crushed-1tsp

5. Coriander seeds crushed-1tsp

6. Coriander powder – ½ tsp

7. Red chilli powder-1 tsp

8. Garam masala – ½ tsp

9. Black salt – ½ tsp

10. Amchoor powder – ½ tsp

11. Kasoori methi-1tsp

12. Roasted jeera powder – ½ tsp

13. Black pepper powder – ½ tsp

14. Salt

15. Coriander leaves

16. Oil-2Tbsp

For the batter

1. Besan (gram flour) – 2 cups

2. Baking powder – ¾ tsp

3. Rice flour – 1 Tbsp

4. Carom seed (ajwain) – ½ tsp

5. Red chilli powder – 1 tsp

6. Salt


Preparation

1. Mix fennel seed crushed, crushed coriander seeds, coriander powder, red chilli powder, garam masala, black salt, amchur powder, kasuri methi, roasted jeera powder and pepper powder and keep aside.

2. Heat 2 Tbsp of oil in a pan. Add the chopped chilli and ginger. Sauté for few seconds on low flame and add the above masala mix. Stir fry for few seconds and add the mashed potato, coriander leaves and salt. Mix well. Stir fry for a minute and keep aside.

3. In a bowl mix besan(gram flour) with rice flour, crushed carom seeds(ajwain), salt and baking powder with 1 cup of water little at a time to make a thick and smooth batter. Keep aside for 10 minutes. Add little more water to make it to medium consistency. Add 1 Tbsp of hot oil and mix well. Keep aside.

4. Apply green chutney on one side of the bread slice and sweet and sour chutney on another slice. Spread a thin layer of potato mix on both slices and join together. Make similar sandwiches with the rest of the slices of bread. Cut the sandwiches diagonally into triangle shape.

5. Heat oil well and reduce to medium. Dip the bread sandwiches in the batter and deep fry on both sides till golden brown.

6. Serve hot with chutney or sauce.


Tips

1. Use one day old bread instead of fresh bread for firmness.
