BEETROOT KICHADI (RAITA)

Kichadi is a mildly sweet spicy and tangy flavoured side dish which is a must for Onam sadya (feast). It is healthy and easy to make yogurt dish which is a favourite of all. Apart from beetroot the kichadi can also be prepared with cucumber, ladies finger, bittergourd, pumpkin, ashguard etc.


Ingredients

1. Beetroot grated – 1 cup

2. Green chilli chopped – 2

3. Ginger grated – ½ tsp

4. Curd – 1 cup

5. Crushed mustard – ½ tsp

6. Grated coconut- ¼ cup

7. Red chilli – 3

8. Mustard seeds – 2 tsp

9. Curry leaves

10. Oil


Preparation

1. Cook the grated beetroot with ¼ cup water for 3-4 minutes on medium flame till tender. Keep aside.

2. Grind the coconut with little curd to a coarse paste and add to the cooked beetroot. Add crushed mustard seeds and beaten curd and mix well.

3. Heat oil in a pan. Fry the curry leaves and keep aside. Crackle mustard seeds in the same oil. Add red chillies, ginger and green chillies. Saute and remove from flame. Pour the beetroot mixture into the pan. Mix well and add salt.


Tips

1. Do not heat the curd otherwise it will split.

2. Use coconut oil and fresh curd for authentic taste.
