BANANA WINE

Banana wine is a sweet smelling homemade beverage with a unique taste and light fruit flavour. It is a very simple recipe of an instant wine. Banana wine comes with great cultural significance and history in areas such as South India, Philippines, Central America and East Africa.


Ingredients

1. Ripe bananas (robusta or mysore poovan) – 1 kg

2. Sugar – ½ kg

3. Instant Yeast – ¼ tsp

4. Boiled and cooled water – 1 litre

5. Cardamom – 6-8

6. Cloves – 6-8

7. Cinnamon – 1 inch

8. Red chilli – 4-5

9. Caramel – ¼ cup (optional)


Preparation

1. Mash the bananas lightly and add sugar and mix well.

2. Add yeast and broken red chillis. Mix well.

3. Transfer to a glass or ceramic bottle.

4. Add water and spices. Stir well.

5. Cover with a muslin cloth and keep for 10 days in a dark place. Stir daily.

6. Strain after 10 days and add caramel, if using. Stir well.

7. Transfer to glass bottles and store.


Tips

1. Adjust sugar as per your preference.

2. Banana wine also get better with age.
