Bamboo rice is a very healthy food which is rich in vitamin B and many other nutrients. It contains fibre and is fat free. Bamboo rice payasam is special and is a delicacy.

Ingredients
1. Bamboo rice – 200 gm
2. Jaggery – 250-300 gm
3. Thin coconut milk – 6 cups
4. Thick coconut milk – 3 cups
5. Ghee – 3-4 Tbsp
6. Cardamom powder – 1 tsp
7. Dry ginger powder – 1 tsp
8. Salt – a pinch
9. Dry fruits, coconut bits for garnishing
Preparation
1. Wash and soak the rice in water for 10-12 hours.
2. Strain the water and cook the rice in a pressure cooker with 6 cups of water for 5-6 whistles on medium flame.
3. Melt the jaggery with enough water. Strain and keep aside.
4. In a pan mix the thin coconut milk with cooked rice on medium flame and cook for 4-5 minutes, stirring continuously.
5. Add jaggery and half of the ghee. Mix well and cook for another 5 minutes, stirring in between.
6. Add the thick coconut milk, cardamom and dry ginger powder. Keep stirring till it starts boiling and remove from flame and transfer to a serving bowl.
7. Fry the dry fruits and coconut bits in the remaining ghee and garnish the payasam. Keep covered for sometime before serving.
Tips
1. Sago (sabudana) (¼ cup) also can be added with the rice at step no.2.
2. Cooking the rice in thin coconut milk in an open pan gives better taste but takes more time.
