BAKED VEGETABLES

Baked vegetable is a part of Italian main course and is unique, healthy and delicious. It is prepared using vegetables and is covered with white sauce and cheese. It is a delicious combination of vegetables with Italian herbs. This is an easy to make dish. It is generally served with garlic bread and soup.


Ingredients

1. For White Sauce – Butter – 3 Tbsp, maida – 3 Tbsp, milk – 200 ml, salt, pepper powder – 1 tsp, nutmeg powder – ½ tsp, cheese – 100 gm

2. Vegetables(carrot, beans, sweet corn, broccoli, green peas, mushroom etc) – 3 cups

3. Diced capsicum – ½ cup

4. Garlic chopped – 1 Tbsp

5. Butter or oil – 1 Tbsp

6. Pepper powder – 1 tsp

7. Onion medium – 1

8. Green chilli – 2-3

9. Origano (optional) – 2 tsp

10. Basil (optional) – 2 tsp

11. Chilli flakes – 2 tsp

12. Rosemary (optional) – 1 tsp

13. Cheese – 100 gm


Preparation of White Sauce

1. Heat butter in a pan, add maida and saute it slightly (white colour should not change).

2. Stir in milk slowly without forming lumps. Let it boil on medium flame till it thickens.

3. Add nutmeg powder, pepper powder, salt and cheese. Mix well and remove from fire. Keep aside.


Preparation of Baked Vegetables

1. Blanch the vegetables except capsicum in sufficient water with salt. Strain it and keep aside.

2. Heat butter. Add garlic and saute. Add green chillies, onion and and capsicum and saute.

3. Add blanched vegetables. Mix well. Add oregano, pepper, rosemary, chilli flakes, basil and mix well.

4. Add white sauce. Mix well and remove from fire.

5. Pour into a greased baking tray and cover the top with grated cheese and sprinkle some herbs such as basil, oregano etc.

6. Bake in a preheated oven at 180 degrees for 10-15 minutes or till done.


Tips

1. Serve with garlic bread and soup.

2. The quantity of cheese can be reduced as per your taste.

3. Add more vegetables according to your taste.

4. The strained water can be used as vegetable stock in soups and other dishes.

5. The colour of cheese turning golden is indication of the baked dish being cooked.
