AVIAL (MIXED VEGETABLE )

Avial is a traditional recipe of Kerala and Tamil Nadu.. an essential dish for all Sadya without which no feast is complete. The preparation of this side dish varies from region to region and may have a little difference in taste as well, the flavour of the dishcomes from the coconut and curd used. It is traditionally served with rice and Sambar.

There are some stories suggest that it was Bhim,one of the five Pandavas , who created this dish.I am sure that you will love it, give it a try and let me know in comments how it came out for you!

Ingredients

1. Assorted vegetables cut lengthwise – 4 cups ( Carrot, Beans, Raw banana, Drumsticks, Raw jackfruit, Golden cucumber , Raw mangoes, Raw tomatos etc)

2. Water – 2 cups

3. Turmeric powder – ¼ tsp

4. Pepper powdr – ¼ tsp

5. Grated coconut – 1 cup (Tender coconut gives better taste)

6. Cummin seeds (jeera) – ½ tsp

7. Green chilli – 3-4

8. Ginger – ½ inch piece

9. Curry leaves - few

10. Curd – ½ cup

11. Coconut oil – 1 Tbsp


Instructions

1. Cook the vegetables in water with turmeric powder, pepper powder and salt. (The vegetables may be added one by one depending on the time required for cooking each of them to prevent over cooking.)

2. Grind together coconut, cummin seeds, green chilli and ginger with curd to a thick paste.(add little hot water if the coconut is cold)

3. When vegetables are ¾ cooked add the above paste. Cover and cook till the vegetables are done.

4. Add chopped curry leaves and coconut oil and immediately remove from fire.

5. Mix and serve hot.
