APPLE CINNAMON ALMOND CAKE

An easy, delicious and moist homemade apple cake with cinnamon and almonds for a warm spiced breakfast treat or as a tea time favourite. It can also be served as a dessert along with vanilla ice cream or a drizzle of sweet sugar glaze or with whipped cream.

Ingredients

1. Maida – 1½ cup

2. Baking powder – 1½ tsp

3. Baking soda – ¼ tsp

4. Softened Butter – 150 gm

5. Eggs – 3

6. Oil – 3 Tbsp

7. Brown sugar powder – 1 cup

8. Almonds – 100 gm

9. Vanilla essence – 1 tsp (optional)

10. Almond essence – ½ tsp (optional)


For caramelising apple

1. Apple grated – 2

2. Sugar – ¼ cup

3. Butter – 1 Tbsp

4. Lemon juice – 1 Tbsp

5. Cinnamon powder – 1 tsp


Preparation

1. Heat ¼ cup sugar in a pan on medium heat. When it start turning brown add 1 Tbsp of butter and mix well.

2. Add 1 Tbsp of lemon juice stirring continuously.

3. Add the grated apple and mix well.

4. Cook on high flame till the liquid dries up, stirring continuously. Keep aside to cool.

5. Mix maida with baking powder and baking soda and sieve 2-3 times. Keep aside.

6. Beat butter in a bowl, adding sugar powder little by little.

7. Add eggs one by one beating continuously.

8. Add oil, vanilla essence and beat well.

9. Add maida mix, folding in slowly into the batter.

10. Add apple mix, little by little and mix well.

11. Add chopped almonds and almond essence. Mix well.

12. Transfer to a greased baking tray and bake in a preheated oven at 180 degrees celcius for 35-40 minutes or until done.

13. Cool and slice the cake.


Tips

1. Walnuts can be used in place of almonds.

2. Vanilla yoghurt in place of eggs can be used for a vegan version.

3. For a crispy crust you can brush butter on top of the cake while it is hot and sprinkle a mix of cinnamon and brown sugar.

4. White sugar also can be used in place of brown sugar.

5. Adjust sweetness as per your preference.
