Hi, I am Shiby, residing with my family in Bengaluru and am the head chef at home. I am basically from Kerala, God’s own country. Cooking, gardening, and interior arrangements are my passion. As a child, I enjoyed gardening and decorations. Cooking….well, truly speaking, it didn’t figure in my priorities. It’s only after my marriage to an Air Force officer three decades ago I took to cooking (had no options) in a serious manner.

 

Having taken charge of my kitchen I started my search for recipes, starting from the basics. From the world of appams, idli, and dosas, I was suddenly exposed to the world of rotis, parathas, puris, and bhaturas. Then came the bakes, desserts, shakes, and whatnot. Also, there were the tandoori stuff, barbeques, continental dishes, and the likes. The numerous transfers in the Air Force gave me personal experiences with varieties of cuisines from across the country. It slowly dawned on me that cooking is indeed a pleasant experience which gives immense satisfaction and pride.

 

Looking back to my initiation to cooking in the Air Force, my rotis looked like a map of India. It was Chanda, my maidservant who taught me how to roll out rotis and puris in shape. Mrs. Wadhwa, my neighbor introduced me to the Chinese dishes and Mrs. GP Sharma taught me the tricks of baking cakes. Mrs. Sanjana shared her expertise in making chocolates. As a novice, my cooking episodes with new recipes misfired at times, but never gave up until I succeeded. I am thankful to the many Air Force ladies in particular from whom I learned about various dishes including the Punjabi favorites, the Gujarati delights, the Marathi specialties, the Andhra spices, and a host of specialties from each and every part of our country.

 

Over the years I have gained confidence and fine-tuned my culinary skills, a feeling reinforced by the many appreciations from those who shared my food. The numerous queries and requests for sharing recipes made me think of reaching out to everyone in the environment. That’s when I came up with the idea of starting a blog that can be easily accessible to all at all times.

 

So, let me welcome you to my blog, SHIBY’S FOOD DIARY. I have taken care to post only those recipes prepared by me and found delicious. You will find the ingredients for the food easily available at your neighborhood store. The step by step method for preparation has been carefully crafted to make it easy even for a beginner. My idea is to make it a platform for everyday cooking and encourage one and all to enjoy the art of cooking tasty, healthy, and nutritious food. It’s my endeavor to ensure that my blog cater for all occasions and all age groups. I shall evolve and improve the blog with your blessings, suggestions, and support over a period of time.
